Alright, this is my first recipe post! And is it a full meal recipe ? No, it is not. With a whole yard to garden, children to parent, wine to study, this blog and a full time job, I’m not about to start experimenting with food recipes. It is a coffee recipe that I created with the products from my pantry.
I am not a big coffee drinker: too much caffeine causes me to grind my teeth, give headaches etc. Recently, I’ve switched to mushroom coffee because it has a better mouthfeel and more body than tea, but that’s just me leaning into my sommelier training in everything I drink. (use coupon code JAIME12206 to get 15% off your first Rasa order.)
My favorite way to take my coffee is with a whole bunch of creamy full fat something and making it light and airy with a frother.
How did the Cherry Mocha Coffee Recipe Come to Be?

I have always added a little something to my coffee to give it flavor. Sometimes it is some vanilla extract and pumpkin spice sometimes it is Ceylon cinnamon. On this particular day, I was seeking something a little bit sweeter. I knew I had drinking chocolate (different than hot chocolate because it is mostly chocolate and not sugar), but what was it missing? That’s when I remembered an episode of the Great British Baking Show where contestants were talking about the mystery of marzipan.
What is Marzipan?
Marzipan is a confection of almond and sugar that is ground into a paste to make decadent candies. Upon first bite, you might think you are eating something cherry flavored, but in fact that is the almond and almond oil.
But Why does Almond Extract Taste Like Cherries, but Almonds I Eat Don’t Taste Like Cherries?
The long and short of it is that almond extract only contains a certain compound from bitter almonds, called benzaldehyde. Regular almonds that you eat do not contain that compound so there you have it!

Back to my Cherry Chocolate Latte…
Remembering what the mates on GBBO said, I reached for the almond extract in my cupboard. I had purchased it when I made a delicious gluten free black forest cake for my childrens’ birthdays months prior. I knew this would be the ticket!

Notes
Here you can get some of the tools that I use for this recipe:
Elmhurst Milked Almonds– This is my favorite almond milk brand because it is only two ingredients, higher protein than and is shelf stable. I also love Three Trees nut milks, but they have to be refrigerated.
Organic Drinking Chocolate – I like to support my local chocolatery (and try the free samples), but when I am not able to get there, I buy this from amazon.
Edible Glitter: If you are serving this to guests, I recommend a little something extra to make it special.
